First Steps

Like many businesses, Sabatia started with small steps, product trials, and proof of concept. Though education and first winemaking trials date back to 2011, Sabatia launched as a commercial production winery in 2021. At every step, the goal has been singular; create the highest quality wine using 100% Oklahoma grown grapes.

Bragging Rights

In partnership with local grape growers, our wines have achieved remarkable bragging rights including 4-time winner of Oklahoma Max Knotts Winemaker Award, multiple gold medals, and awards including Best of Show and Best of Show International. Sabatia wines represented the state of Oklahoma at a Congressional event in Washington DC and at the 2025 Oklahoma Wine Forum. Sabatia has graced the wine lists of distinguished local restaurants including winners of Bon Appetit Magazine Restaurant of the Year, Best of Award of Excellence from Wine Spectator, James Beard Award Winner, and James Beard semi-finalist..

Intimate Life

We love to hear the stories of when Sabatia wines are chosen, saved, and shared for personal and intimate moments of daily life; the family dinners, anniversaries, birthdays, weddings, and sharing with friends. There are likely more countries to add to the list, but we know bottles of Chambourcin, Seyval Blanc, and Chardonel have traveled as gifts to Chile, England, Greece, and Italy.
